Vegan Strawberry Dessert Parfait (from Native Foods cooking demo)
I attended a cooking demo yesterday at Native Foods, and it was simply delicious! I'm including the recipe for this parfait below--enjoy!

Vegan Strawberry Dessert Parfait
For the strawberry kanten:
Ingredients:
- 2 cups apple juice
- 2 cups strawberries, sliced
- 1 tsp vanilla
- 1/3 cup agar agar flakes
- 1 tbsp lemon juice
- In a medium saucepan, heat apple juice over medium heat and slowly stir in agar. Allow to boil.
- Simmer 5 minutes, until liquid is clear and smooth.
- Add berries and lemon juice.
- Remove from stove. Allow to cool 20-25 minutes. Portion into 6 party glasses.
- Cool and refrigerate 2-3 hours, or until set.
Ingredients:
- 1/2 cup flour
- 2 cups soy milk
- 1/3 cup sugar
- 1/2 tsp salt
- 1/4 cup lemon juice
- 2 tsp lemon zest
- 1/2 tsp vanilla
- Pour flour into small bowl. Whisk in 1/2 cup of soy milk. Set aside.
- Pour remaining soy milk into small saucepan. Add salt and whisk. Add flour mixture and whisk well.
- Cook over medium heat, whisking constantly for 5-6 minutes.
- Add remaining ingredients. Whisk for another minute.
- Remove saucepan from heat and transfer mixture to bowl.
- Place wax paper or plastic on top of cream to prevent a coagulated layer.
- Refrigerate 3-4 hours. Once cool, portion on top of strawberry kanten.
- Garnish with fresh blueberries.
